Delicata Winter Squash

This yellow and green striped squash is a farmer and customer favorite! The smallish fruits (approx 15cm) are the perfect meal size. They are incredibly sweet and make a great winter storage crop. 

Start in pots in greenhouse in April to transplant out after frost danger has passed, or direct seed in May. Seed 2.5 cm (1 inch) deep in fertile soil. It is popular to make mounds and plant 3-5 seeds, thinning to the strongest plant. Space plants 90-120cm (36-48″) apart in rows 120-180cm (48-72″) apart. 100 days to maturity.

When plants have died back, harvest and cure in the sun for 10 days safe from frost or in a warm dry room. Enjoy!
